I discovered my favorite pizza dough recipe on pizzamaking.com a few years ago. It’s quick, easy, and bakes very nicely.

After making the pre-marinated apple bourbon pork loins the other night, I had some of it left over. One of my weaknesses is a good Cuban sandwich. There’s just something about the crunch of the bread mixing with the tang of the mustard, rich melted cheese, the sweet smoky flavor of the ham and the savory goodness of the roasted pork. It’s comfort food at its finest. I might not have had the ingredients on hand to make a traditional Cuban, but I’d like to think I did well with what I had.
Apple Bourbon marinated pork tenderloin. It sounds pretty fancy. Sounds like something you’ll put some serious time into. That really wasn’t the case. I did very little in the way of preparation for this meal other than warm the grill up and peel the pork loin out of a wrapper. Let’s face it, you can’t cook something truly epic every night of the week. Sometimes after a long day at work you just need something quick and good that wasn’t microwaved. Tonight was one of those nights for me. So with that in mind, I decided to cook some pre-marinated pork loins.
I love hummus. It’s such a versatile thing. It can be a meal, a side, a condiment, an appetizer, anything really. When Nate and I got together to make Kofta one night, I decided to make a batch of hummus from scratch to go with it.
Well, it took less time than anticipated to unleash a smoked meal post here at Cook Until Epic. I had my parents over a few weeks back for a dinner I prepared on the smoker. Mom enjoyed it enough that the next time I talked to her she asked if I thought I could smoke a turkey. I said I’d love to. Her response? “Good, because I just bought a 20lb bird!”. Looked like I was cooking dinner for Mother’s Day.
